Our Story
Essy started cooking in his family's restaurant back in the '90s. He was a teenager. Somewhere along the way he also became a world karate champion, but he always came back to the kitchen.
He opened X Chicken with his wife Mali, and they've been running it together for over a decade now. Same spot in Auburn, same food, same people. That's kind of the whole point.

Family Kitchen
Essy started working in his family’s restaurant as a teenager. That’s where he learned to cook, and honestly where he caught the bug. The food we make at X Chicken comes from those same recipes.
Karate Champion
Yeah, Essy is also a world karate champion. He doesn’t bring it up much, but it shows in how he runs the kitchen. Everything is precise, nothing gets half-done.
Essy & Mali
Essy and his wife Mali run X Chicken together. They’ve been doing this for over a decade in Auburn. If you come in enough times, they’ll probably know your order.
The Food
Chicken kebab, grilled over open flame, with real saffron and fresh herbs. We keep it simple because the food doesn’t need much else.
